The yellow pollen on the flower spikes of Cumbungi (Typha orientalis), also identified as Cat-tail or Higher Reed Mace, is higher in protein. It can be collected and mixed with other flours (eg Lomandra longifolia) and water and created into smaller cakes/damper to be baked in the hot ashes.
